You'll need
1 packet Italian Vince
1 cup cooked lentils
1 cup mixed frozen veg
400g peeled boiled potato
1 tbsp Olivani (or similar)
1/4c nut milk
Method
Hydrate Vince with 1 cup of boiling water
Add lentils (I use tinned) and veggies
Add an extra 1/2c boiling water for a saucier finish
Spoon into 4 small oven proof dishes
Mash hot boiled potato and stir through Oliviani, nut milk, salt and pepper
Spoon mash on top of Vince mix and spread with a fork
Bake on fan grill for approximately 20 mins or until golden
