YOU'LL NEED:
- 100g packet Kiwi Vince
- 2 sheets puff pastry
- 150g mushroom
- 150g tofu
- 30g chopped spinach
- 1 Tbsp Tamari soy
Nut milk for brushing
Seeds for sprinkling
Serves 2-3
METHOD
- Add 1/2 cup boiling water to 1 packet of Kiwi Vince
- Break up the tofu and mushrooms and add with the soy to the food processor
- Blend briefly until minced, you may need to scrape down the sides 1/2 way through
- Add the chopped spinach to the food processor and blend briefly to combine
- Empty the mix into a medium bowl and stir the Vince through
- Divide the mix onto the 2 pastry sheets, spread from one side to the other in a sausage shape and roll
- Brush with mylk, sprinkle with seeds, score diagonally and cut each roll into 3
- Cook for 25mins at 200℃ or until golden.
