Ingredients
BASE

1 pita bread (or flatbread of choice)

7–8 mushrooms, cut into wedges

½ red onion, sliced

1 garlic clove, smashed

1 tbsp olive oil (a good glug)

Few sprigs fresh thyme, chopped
-
2 tsp balsamic vinegar
-
1 tbsp pizza sauce
-
15 g Vince Italian mix (no need to hydrate)
-
¼ cup grated cheese (mozzarella or tasty cheese)
-
Salt and pepper to taste
OPTIONAL GARNISH
-
Fresh basil leaves
-
Extra thyme sprigs
Time: 5–10 mins prep, 6 mins cook
Method
PREPARE THE TOPPING:

Heat a pan on medium heat. Add olive oil.

Sauté onion and mushrooms for 4–5 minutes until softened and lightly browned.

Add smashed garlic and chopped thyme. Cook for 1 minute until fragrant.

Deglaze pan with balsamic vinegar, stirring until absorbed. Season with salt and pepper.
ASSEMBLE THE PITA:

Spread pizza sauce evenly over pita.
-
Sprinkle Vince Italian mix across the base.

Spoon mushroom–onion mixture on top.

Sprinkle with grated cheese.
COOK:
-
Place pita in air fryer at 180°C.
-
Cook for 6 minutes until cheese is melted and golden.
SERVE:

Garnish with fresh basil or extra thyme if using.

Slice into wedges and enjoy hot.
