Vince + Mince Cottage Pie

Proper comfort food with a veggie boost.

This Vince Cottage Pie uses 400g of beef mince with Classic Vince to bulk out the filling, add flavour and sneak in extra veggies.

No gravy mix or stock needed. Classic Vince helps create a thick, saucy filling on its own.

Topped with creamy mash and melted cheese, it’s an easy, hearty family dinner.

Ingredients

Filling

  • 400g beef mince

  • 1 pouch Classic Vince

  • 2 carrots, cut into 1cm cubes

  • 1 cup baby peas

  • 1 cup boiling water

  • Extra ½ cup water, if needed

  • Salt and pepper, to taste

Topping

  • 800g to 900g potatoes, peeled and chopped

  • Butter

  • Milk

  • Salt and pepper

  • 1 cup grated cheese

Method

  1. Boil the potatoes until soft, then drain and mash with butter, milk, salt and pepper.

  2. Place the diced carrots in a small pot of boiling water and cook for 3 minutes. Add the baby peas for the final 1 minute, then drain and set aside.

  3. Brown the beef mince in a large pan.

  4. Stir through the Classic Vince.

  5. Add 1 cup boiling water and stir well. 

  6. Stir through the cooked carrot and peas. Add an extra ½ cup water if you would like the filling a little saucier.

  7. Spoon the filling into a baking dish.

  8. Top with mashed potato, then sprinkle over grated cheese.

  9. Bake at 200°C for around 20 minutes, or until the cheese is melted and golden and the filling is hot and bubbling.

This recipe is a simple way to stretch 400g of beef mince into a hearty family meal, while adding extra veggies without chopping up half the fridge.

Classic Vince brings the flavour and helps thicken the filling, so you do not need gravy powder, stock or extra sauces.
