Cheesy One Pot Italian Vince Pasta

A cosy, cheesy one-pot pasta made with Italian Vince, cauliflower, pasta and a little beef mince. It’s simple, comforting and packed with extra veg, without needing a pile of chopping or extra ingredients.

Ingredients
1 Tbsp olive oil
300g beef mince
1 pouch Italian Vince
1½ cups pasta
2 cups small cauliflower florets
2 cups beef stock
1 cup milk
1 cup water
¾ cup grated cheese, plus extra to serve
Optional: extra ½ cup water after cooking, for a saucier pasta
Method
Heat the olive oil in a large deep frypan or saucepan over medium-high heat.
Add the beef mince and cook until browned, breaking it up as it cooks.
Add the Italian Vince, pasta, cauliflower, beef stock and milk. Stir well to combine.
Bring to a gentle simmer, then reduce the heat to medium-low.
Simmer uncovered for 12 to 15 minutes, stirring a couple of times, until the pasta is al dente, the cauliflower is tender and the sauce has thickened.
Stir through the grated cheese until melted and creamy.
For a saucier pasta, stir through an extra ½ cup of water after the pasta is cooked.
Serve straight away with extra cheese on top.
Tip
If the pasta needs a little longer, add a splash more water and keep cooking for a few minutes. If it looks too saucy, let it bubble away uncovered until it thickens.
