Serves: 1
Prep time: 10 minutes
Cook time: 20–30 minutes
Cooking method: Air fryer

Ingredients

Cauliflower Steak

1 thick cauliflower steak (2.5–5cm)

1 tsp olive oil

Salt and pepper, to taste

¼ pouch Italian Vince (approximately 25g)

Boiling water, as directed on the Vince packet

2 tbsp tomato passata

2 tbsp grated cheddar or mozzarella

Green Herby Cottage Cheese

¼ cup cottage cheese (approximately 60g)

¼ small garlic clove, finely minced

1 tsp lemon juice

Pinch of lemon zest

1 tbsp fresh parsley, finely chopped

Salt and pepper, to taste

Method

1. Prepare the Cauliflower

Wash the cauliflower and remove the leaves, keeping the core intact. Cut a thick steak (2.5–5cm) through the centre. Save any loose florets for another meal.

2. Air Fry the Cauliflower

Brush the cauliflower steak with olive oil and season with salt and pepper.

Air fry at 190°C for 12–15 minutes, turning once, until almost tender.

3. Make the Green Herby Cottage Cheese

In a small bowl, combine the cottage cheese, finely minced garlic, lemon juice, lemon zest and chopped parsley. Stir well and season with salt and pepper. (do this while the cauli is cooking)

4. Add the Italian Vince

Meanwhile, rehydrate the Italian Vince according to the packet instructions.

Spread the tomato passata over the cauliflower steak, spoon over the Vince and sprinkle with grated cheese.

5. Melt the Cheese

Return to the air fryer for another 4–6 minutes, until the cauliflower is tender, the topping is piping hot and the cheese is golden.

6. Serve

Remove the cauliflower steak from the air fryer and spoon the green herby cottage cheese over the top just before serving.

Deb's Tip

For a single portion, simply stir the cottage cheese ingredients together. If you prefer a smoother topping, make a larger batch and blend it.

Don't throw away those leftover cauliflower florets! They're perfect for roasting or adding to another meal.
